1.5 oz Colonial Rum
3 Cucumber Slices (2 diced up, 1 whole slice) peeled or unpeeled your choice
Squirt Lime juice
4 or 5 Mint Leaves
.5 oz Simple syrup
Club Soda
Put Mint leaves, simple syrup, and the 2 diced cucumber slices into the glass. A flat bottom glass helps. Muddle (press) the ingredients in the glass. If you do not have a muddler, you can use a spoon. The object is to press the oils out of the mint and the juice out of the cucumber.
Next, add ice. Pour your Colonial Rum over the ice, squirt your lime juice in. At this point, you can shake everything in your glass and then top with club soda!
